BBQ Tempeh & Hemp Seed Ranch Dressing

This recipe is my last-minute weeknight meal. I like to use tempeh for a quick protein in tacos, bowls or wraps. The readymade BBQ sauce makes the fuss free. I like using Primal Kitchen products because they are clean and healthy ingredients. I try to avoid preservatives where I can.


The Ranch dressing is a nice addition to a bowl or wrap. I like to make a little extra and keep it for dipping with some fresh veggies. I prefer to use Greek yogurt over sour cream to keep it healthy.


I have made wraps (using leftover rotis), tacos, grain bowls and tacos with this tempeh/sauce combo. What I like about this recipe is that its versatile, so you can work with whatever ingredients you have on hand.


BBQ Tempeh & Hemp Seed Ranch Dressing


Ingredients


BBQ Tempeh:


Hemp Seed Ranch Dressing:

  • 2 Tbsp. Hemp Seeds

  • 2-3 Tbsp. Cup Water

  • 1/2 Cup Greek Yogurt

  • 1-2 Green Chilies (Optional)

  • 1 Tbsp. Dill, finely chopped

  • 1 Tbsp. Parsley, finely chopped

  • 1 Tbsp. Chives, finely chopped

  • 1/2 Lemon, Juiced

  • 1 Tsp. Garlic Powder

  • 1 Tsp. Onion Powder

  • Salt to taste


Bowl Fixings:

  • 1/2 Cup Cooked Quinoa

  • 1/4 Cup, Arugula, chopped

  • 1/2 Avocado, diced

  • 5-7 Cherry Tomatoes, cut in half

  • 1/2 Persian Cucumber

  • 1/4 Cup Love Corn (I use Sea Salt but you can use any flavor) or any crunchy seed mix


Directions


  1. You can make the dressing ahead of time and refrigerate. I make extra to dip with the veggies for a snack later.

  2. For your dressing, Add the ingredients (minus the herbs) in a blender and blend well. Mix in the finely chopped herbs. Store in an airtight container in the refrigerator.

  3. To make the tempeh, cut the tempeh block into thin strips.

  4. In a pan heat your oil on a medium flame. Pan fry your tempeh strips until golden brown. This should take a few minutes per side.

  5. Remove your strips onto a napkin or kitchen towel to absorb the excess oil.

  6. In the same pan, add your BBQ sauce and hot sauce (optional). Make sure your flame is set to low so that your sauce does not burn. Add your tempeh and mix well.

  7. Add a few tablespoons of water if necessary. Cover and let simmer for 8-10 minutes.

  8. Assemble your bowl and add the tempeh and ranch dressing. Top with some crunchy seeds or Love Corn. Enjoy!
